My favorite gluten-free donut and biscuit recipes



Coconut Flour Donuts (muffins)
1/2 c coconut flour
1/4 tsp seasalt
1/4 tsp baking soda
6 eggs
1/2 cup honey (or other sweetener)
1 tsp vanilla
1/2 cup butter (coconut butter, veg oil works as well)
Optional: nutmeg to taste

Oven 350*F

Blend all dry ingredients together in bowl
Using whisk or mixer (low setting) blend all wet ingredients
Fill donut pan circles (muffin tin) about 2/3 full
Bake 20 minutes
Check with toothpick



Coconut Flour Biscuits
4 eggs
1/4 cup butter, melted
1/4 cup honey
1/4 tsp sea salt
1/3 cup coconut flour
1/4 tsp baking soda

Oven 400*F

Blend eggs, butter and salt.
Combine flour with soda, whisk into batter until no lumps.
Drop batter into spoonfuls onto greased cookie sheet

Bake 15 minutes.

Makes 8
