Low Carb SPICED SUGAR COOKIES

Low Carb Luxury Recipe!
Spiced Sugar Cookies 

Ingredients:
  • 1 cup almond flour
  • 3/4 cup unsweetened, unflavored or vanilla whey protein powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/2 cup Splenda
  • Spiced Sugar Cookies
  • 1/2 cup Erythritol
  • 1 stick (4-oz) butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
Combine almond flour, whey protein powder, baking powder, nutmeg and cinnamon together in a bowl and set aside. Cream butter, Splenda, and Erythritol together until light and fluffy. Add vanilla and blend well. Add egg and mix on high until light and fluffy.

Slowly add flour mixture and combine only until incorporated well. Wrap in plastic wrap and refrigerate at least two hours or overnight.

Preheat oven to 325°F.

Roll out dough onto lightly floured board until 1/8 to 1/4 inch thickness. Cut with cookie cutters and carefully transfer to lightly greased cookie sheets. May sprinkle with splenda granular if desired. Bake in a 325°F oven until lightly browned, about 8 to 10 minutes. Let stand one minute and transfer to wire rack to cool completely. Makes approximately 36 cookies.

Entire recipe is less than 25 grams net carbs. Each cookie is 1 net gram of carbs.

FRUGAL TIP:
Buy frozen veggies. While fresh veggies are a little better, frozen veggies are almost as good, and much better than nothing. And since you can keep them in the freezer, they rarely go bad.
