This is my go-to first meal of the day: brisket and fried eggs. The brisket (smoked meat) is a little expensive, but you're not going to sit down and eat the entire thing in one sitting, unless you have a large crowd to feed.
I buy Schwartz's smoked meat from Costco which is already cooked deli meat. Also it's beef, not pork which is great for those who don't eat pork (me for one).
I add butter to a frying pan and while it's melting I cut thin slices of the brisket. Even before the butter has melted, I place the slices in the pan. I let them brown up. It takes about five minutes in my stainless steel frying pan, med-low heat. Then I turn the slices and let the other side brown. Once that's done, I set it aside on a plate. Then I crack eggs into the same pan (I usually eat two), add a liberal amount of salt, When one side is cooked, I flip them. Eggs and brisket tastes wonderful together.
Cooking tip: once one side of the eggs are cooked, I turn off the burner, then flip. The eggs will continue to cook until removed from the pan. Because I use a stainless steel frying pan, food has a tendency to stick. So once the pan is empty, I fill it half-way with hot water and let it sit until after I've finished eating. Then when I go back to clean the dishes, the frying pan is as easy to wash as if it's Teflon coated.
Next week I'll post my recipe for coconut flour donuts. Most low-carb donut recipes don't use a certain spice that makes a huge difference when it comes to flavor, and it isn't cinnamon.
