Last night I went looking for a no-bake recipe for something sweet because I'm tired of giving in to temptation. So I found a recipe, but I'm going to put my spin on it.
- 2 cups natural peanut butter
- 1/2 cup Splenda (if you have low carb maple syrup, it'd be better)
- 3/4 cup Coconut flour
- Line a baking sheet with parchment paper or wax paper. Set aside.
- In a medium bowl, add peanut butter, coconut flour and Splenda (to begin with. For me getting back on my feet and continue on the healthy way of eating, the first step must be easy, and Splenda is an easy first step).
- Using a fork, stir until well mixed.
- Using a spoon, scoop and drop peanut butter balls onto the prepared baking sheet, spaced evenly apart. Store in the fridge (or freezer) in a plastic container.
- Today I found inspiration in Jim Rohn's Youtube video Action over Excuses. Running time is around 16 minutes and I highly recommend it.
