Sometimes, there is nothing better than a fresh bread, right out of oven. Here is a gluten-free, quick recipe for making a fresh, nutritious flat bread.
Known as socca in France, chickpea flour flatbreads are a popular street food along the French Mediterranean Coastline, particularly Nice. These breads offer a higher protein, higher soluble fiber alternative to most bread. Guten-free, they are an excellent source of potassium. In Italy, a similar dish is known as farinata. Versions of chickpea flour crepes also can be found in Indian cuisines.

Ingredients
1 1⁄2 | c | Water |
1⁄2 | t | Salt |

2 | c | Chick Pea Flour |
1 | t | Kardea Phoenician Spice Blend (or cumin, caraway or rosemary) |
3 | T | Olive Oil (pure, not extra virgin) |
Instructions
Preheat the oven on maximum temperature to 450 degrees. Sift the chickpea flour into a bowl. In a separate large bowl, whisk together water, oil, salt choice of optional spice. Add chickpea flour, a little at a time, whisking in completely to make a batter. Set batter aside.
Place a large oven-safe skillet in the hot oven for 4-5 minutes. Remove this very hot pan carefully. Quickly add enough of a higher temperature cooking oil so that it covers the bottom of the pan. Working quickly, add a ½ cup of the batter to the pan, swirling it around to fill the pan in an even thin layer. Put in oven and cook 5-7 minutes till browned a bit around the edges. Remove from oven. Flip. It should be golden brown on the bottom. Cut into wedges and serve as an alternative to bread.
