LINDA'S CHICKEN SALAD
Cooked chicken is combined with crunchy celery and onion, and then blended with Thai seasoning, curry, mayo, and mustard to make a fresh and versatile salad.
INGREDIENTS:
6 | Chicken Tenders |
1 | Celery Stalk, chopped |
½ | Small Onion, chopped |
1 Tbsp | Thai Seasoning, optional |
1 Tbsp | Curry Powder, optional |
3 Tbsp | Mayonnaise |
1 Tbsp | Mustard |
Salt & Pepper, to taste
DIRECTIONS:
Boil chicken until done, then chop into even pieces. Combine all other ingredients and stir together. Add more mayonnaise, if needed. Serve on toasted bread as a sandwich, canape, or on a bed of lettuce for a simple lunch.
Frugal tip: Place window air conditioners on the shadiest side of the house. It won't have to work as hard and will use less power.
