Double Chocolate Zucchini Muffins Gluten Free

Double Chocolate Zucchini Muffins {Grain-Free}
24 mini muffins or 12 standard sized muffins
Double Chocolate Zucchini Muffins {Grain-Free}
  • 1/4 cup melted butter
  • 1/4 cup rapadura sugar (or sugar of your choice)
  • 6 eggs
  • 1 teaspoon vanilla
  • 1/2 cup coconut flour
  • 1/4 cup cocoa
  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 3/4 cup shredded zucchini (about 1 medium zucchini)
  • 1/4 cup Enjoy Life chocolate chips
  1. Preheat oven to 350 and line 24 mini muffin tins with liners.
  2. Cream together butter and sugar and whisk in eggs and vanilla and applesauce.
  3. In a separate bowl mix coconut flour, cocoa and baking powder. Pour wet ingredients into dry ingredients and mix thoroughly. Don't worry about over mixing. Baking with coconut flour is different than using wheat. Fold in zucchini and chocolate chips.
  4. Divide batter evenly among muffin tins and bake for about 12-16 minutes, or until a toothpick inserted in the center comes out with only a moist crumb.
