A simple soup recipe for sticking to a gluten-free/low carb way of eating

 When I was growing up, one of the staple meals in our home was hamburger soup, especially on the weekend. It had quite a few vegetables in it, but in my recipe, I pare it down for simplicity sake. It's both filling and tasty, at least that's my biased opinion.

Easy Hamburger Soup

in a pot, add water, hamburger, onions, beef collagen, and salt. While it's heating, add chopped carrots and frozen brocolli. You can add turnip, cabbage, even sweet potato. I sprinkle in some Italian seasoning (yeah, the kind you put on top of homemade pizza). *Be careful the spices don't have hidden wheat. 

Cook on med heat for an hour, med-low if you're using a stainless steel pot once it starts to boil

My prep tip (as found in my book the Stay at Home Organized Writer, a daily checklist) is to peel and cut up the vegetables the night before and that way it doesn't take anytime to throw the ingredients in the pot. I've also been known to peel an entire bag of carrots, chop and wash, then freeze them. Again, so simple.

Once it's cooked, I do something that irritates my mum: I mash the soup with a potato masher. The flavors blend together making it yummier.

When it's time to eat, I add a tablespoon of butter. Yup, you read that right. I let it melt in my soup bowl, and then slice some carb-free cheese as a bread replacement. After the soup has cooled down in the pot, I then store it in a plastic juice pitcher. That way it's not taking up a lot of space in the fridge. 

Hamburger soup is amazingly filling and wonderful on a cold winter evening.
